Fresh roasted coffee in Washington: roast days, miles and timing

When Washington roasters say they roast and ship, and how many days a bag needs before and after it reaches you.

Quick answer: how fresh should coffee be?

Brew roasted coffee a few days after the roast date and finish it within about two to three weeks. Wikipedia's coffee bean storage article says a few days of degassing between roasting and brewing gives the best results, and its roasting article puts the typical optimal shelf life at about two weeks. The National Coffee Association gives whole beans 1 to 3 weeks at room temperature in an airtight container. A bag roasted in Washington and shipped in state can reach you well inside that window.

A published roast day is useful. If a roaster ships only on set days, order the day before and the bag leaves with the newest roast.

How far a bag travels inside Washington

The roasters we list are spread along I-5 from Bellingham to Olympia, with Spokane on the far side of the Cascades. Wikipedia gives these distances from the cities' own articles, rounded as they print them.

At the far end, a Spokane bag headed for Seattle crosses the whole state, about 280 miles. Pullman sits about 65 miles south of Spokane. A short trip in state is one of the practical reasons we give on why local roasters matter.

Skip the shipping: roastery pickup

The freshest bag is the one you collect. A few roasters we list let you order online and pick up:

  • Kuma Coffee: at the roastery's roll-up door on Thorndyke Ave W in Seattle, Monday to Thursday, 10 am to 4:30 pm, with a free drink from the warehouse cafe.

Freshness starts before the roaster

Green coffee has a freshness clock too. Wikipedia's coffee bean storage article says green beans stored for more than a year are no longer considered current crop, and old crop is worth less because the beans have dried out. Harvests come at different times by country: Wikipedia says most Brazilian farms harvest in the dry season from June through September, and the NCA notes that Colombia is one of the few places where trees grow year round, with two harvests a year. Some roasters we list buy from the same growers season after season: Zoka says it often works with the same farmers year after year, and Kuma says it often buys a farmer's entire crop for the season.

Fresh coffee: questions

How many days after roasting should I brew coffee?

Wait a few days. Wikipedia's coffee bean storage article says a few days of carbon dioxide release between roasting and brewing gives the best results, and that the gas protects the beans while it lasts.

Is coffee still good a month after roasting?

It is safe but past its best. The NCA says roasted beans lose aroma and flavor over time and gives them 1 to 3 weeks at room temperature once opened; frozen in an airtight container, 3 to 4 months.
