Their story
Elm opened as a cafe and roaster in Seattle's Pioneer Square. Its early blog thanked a year of regulars and described a room of red exposed brick with a palette taken from a foggy Whidbey Island beach morning. Its roasting philosophy is to roast until the coffee tastes good and then stop. By general standards its roasts sit on the light side, but the team focuses on full development so the cups are sweet rather than grassy or sour. It buys through importers including Covoya, Cafe Imports, Atlas, Crop to Cup and Shared Source, and generally selects coffees scoring 86 points or higher.
Elm says it pays well above Fair Trade minimums, often four to five times, even though it rarely buys certified coffees, since certification is too costly for many small producers. Every coffee starts with sample roasting: the team cups pre-shipment samples to choose lots, then checks arrival samples before profiling full roasts. It roasts on a traditional drum roaster, roasting and shipping online orders on Mondays and Thursdays.

Roast levels run light. House blends include 9 Swans Seasonal Coffee. Single origins on the list when we checked: Danche Habtamu Fikadu (Ethiopia), Jejeba Habtamu Fikadu (Ethiopia) and Nelson Fabio Cordoba, Tabi. An Elm Espresso Club subscription is offered. Elm Seasonal Decaf, also offered as a Decaf Club. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.
Where to drink it
Elm's blog describes a cafe in Pioneer Square, but the current site only lists online roast days, so whether a cafe is open today is not confirmed.
