Herkimer Coffee is one of the beloved local roasters we follow in Washington: an independent roaster based in Seattle, founded in 2003. Here is what their own pages and public sources say about them, in our words.
Their story
Herkimer started in 2003 on Phinney Ridge in north Seattle. That first cafe is still its home, with the roastery and wholesale office in the same building. A second cafe opened in 2007 at the north end of University Way, on the edge of Ravenna and the University District, and a third opened in 2020 at 4th and Blanchard in Belltown for the downtown work crowd. It describes itself as a Seattle roastery run by a small team, focused on coffee for everyday drinking.
Herkimer says it buys green coffee directly from small farms that use traditional, sustainable growing methods, and pays prices meant to keep those farms viable over the long term. Coffee is roasted every day, and staff and wholesale partners get ongoing training, with quality checks from origin to cup.

Roast levels run medium. House blends include Drip Blend, Espresso Blend and Decaf Blend. Single origins on the list when we checked: Colombia, Campo Amor, Guatemala, Juicy, Brazil, Sitio da Serra and Ethiopia, Yirgacheffe. Espresso Blend. Decaf Blend. Rooted on Phinney Ridge since 2003, where the neighborhood cafe doubles as the roastery. The Ravenna cafe on University Way mostly serves neighbors and UW students. Roasts and runs all three of its cafes within Seattle city limits.
