The region's coffee story
Walla Walla Roastery sits at the foot of the Blue Mountains, and its blend The Blues takes the mountains' name. Another blend was made with Kyle MacLachlan, whom the roastery calls an honorary Walla Wallan, to go with his Pursued By Bear wine.
Rockabilly came along in 2014 and names its coffees for hot rod culture: 2-Stroke mixes Colombian and Brazilian beans, and Chop Top is an Ethiopian lot. Also in 2014, Cody, who grew up in the Tri-Cities, started as a barista. He moved into roasting and equipment repair within a year, roasted well enough to earn the nickname Houdini, and later put it on his own company.
Thomas Kalmbach moved to the Tri-Cities in 2021 and began with a small-batch roastery before opening the Peacock as a full cafe and bar. The name honors his late mother, who collected peacock feathers.
At Livit in Walla Walla, one of the team spent six weeks in Guatemala learning to roast and visiting farms before the business took shape.

How we chose these roasters
Every roaster here roasts in Washington and was operating when we read its own site, on the date its card shows (the list itself was last checked 2026-09-27). Facts come from each roaster's own pages, written in our words; we take nothing from reviews and show no ratings. No roaster pays to be listed, and a listing does not mean the roaster is part of the club. Run a roaster here and something is off? Email coffee@palousecoffeeclub.com and we correct or remove the page.
