Their story
Thomas Kalmbach moved to the Tri-Cities in 2021 and started with a small-batch roastery before opening a full cafe and bar. The Peacock opened in October 2024; its name honors his late mother, who collected peacock feathers. The Bean Club delivers or holds fresh beans for pickup every two weeks, with access to limited batches and rotating single origins.
Its Brazil Espresso Roast is an exclusive lot from four family-run farms in Minas Gerais, among them Fazenda Furnas and Boa Vista. The Peru Decaf Roast is a Swiss Water decaf from Finca Churupampa in Cajamarca, a farm led by the Tocto brothers that helps over 200 nearby producers. Along with coffee, the menu covers sandwiches, craft cocktails, draught beer flights and a pick-three wine tasting.
