Kent's coffee story
Rad began roasting in Kent in 2010, after its family spent a year meeting in South King County coffee shops and coming away let down by the coffee. Matt, who runs the roaster, already had about ten years as a barista, roaster, trainer and manager. He now roasts on a 15 kilo machine built in Turkey. The loud 1980s look is on purpose, and the blend names come from his childhood.
Poverty Bay goes back further: Dan Olmstead founded it in 1997. Its cold brew grounds and roasting chaff go to Cedar Grove composting, more than 35,000 pounds a year by its count. The Olmsteads later handed the Poverty Bay Cafe, open since 1989, to FUSION, a Federal Way nonprofit that houses families experiencing homelessness, and the cafe still sells the coffee.
Boon Boona's founder, Efrem Fesaha, grew up in Seattle in an Eritrean family that held the coffee ceremony at home. The company has since opened cafes on Capitol Hill, inside the University Book Store and on Microsoft's East Redmond campus.

How we chose these roasters
Every roaster here roasts in Washington and was operating when we read its own site, on the date its card shows (the list itself was last checked 2026-09-27). Facts come from each roaster's own pages, written in our words; we take nothing from reviews and show no ratings. No roaster pays to be listed, and a listing does not mean the roaster is part of the club. Run a roaster here and something is off? Email coffee@palousecoffeeclub.com and we correct or remove the page.
