Rocket Bakery is one of the beloved local roasters we follow in Washington: an independent roaster based in Spokane, founded in 1992. Here is what their own pages and public sources say about them, in our words.
Their story
Spokane natives Jeff and Julia opened the first Rocket Bakery in Millwood in 1992. It has since grown to five cafes, a drive-thru and a grocery store. Its coffee has been roasted in house since 2016 under the name Astro Roast. A 2011 Spokesman-Review profile says Jeff and Julia Postlewait put $15,000 of seed money into the first Rocket in 1992, after running restaurants in Spokane and Seattle.
The couple told the paper they chose sit-down coffeehouses over drive-throughs so customers would have a place to linger, and at that point the shops went through about 30,000 pounds of coffee a year. Its Lift-Off Espresso mixes old world and new world coffees to a recipe set by Jeff, and the house roasts range from medium-light to medium-dark.

Why buying from Rocket Bakery matters here
The bakery donates pastries to local groups such as the Fall Folklife Festival and The Spokane Mission. The Wall Street cafe at River Park Square shares its space with the STCU credit union branch, a pairing first announced in 2016. The company's production site and main office sit on North Burns Road in Spokane, and the bakery says a storefront is planned there too. At the 1st and Cedar cafe the menu stretches to sandwiches and salads, with rotating beer on tap and bottled beer and wine.
