Their story

The roaster follows a central Italian style, using longer roasts and careful airflow in the drum to get a smooth, heavy-bodied cup with less acidity. Batches stay under 30 pounds, and the roasted beans are cooled with air rather than water. It has roasted on Diedrich machines since 1985, working through five of them, and prefers their gentler infrared burners to direct flame.

Fresh batches go into one-way valve bags within about 15 minutes, instead of resting in bins for days before packing. Its water-processed decaf French roast was refined over about 30 years, according to the shop page. Pantomime, the darkest drip coffee, blends five beans roasted two different ways, and Loop d' Loop, a Vienna-style roast suited to milk drinks, is listed as the most popular blend.
