Caffe Cocina is one of the beloved local roasters we follow in Washington: an independent roaster based in Poulsbo, founded in 2012. Here is what their own pages and public sources say about them, in our words.

Their story

Since 2012 the company has run cafes in Poulsbo, roasting its own Direct and Fair Trade organic coffee. In September 2026 it fired up a new, larger roaster to keep pace with its two cafes and a growing list of wholesale accounts. Owner Eric Mahler was named Young Leader of the Year by the City of Poulsbo in 2016.

Mahler moved into coffee from commercial banking, trained with La Marzocco and Zoka Coffee, holds SCA certification, and led the Poulsbo Chamber of Commerce board in 2018. Co-owner Sharon Mahler, retired from a 38 year banking career, handles the back office and set up health and retirement plans for staff with a company match. New employees train in the roasting room before they start serving customers.

Through a Cafe Solutions division it helps independent cafes get started, and it created a private label Vietnamese coffee and a Heritage Blend for Cafe Vulao. Single Origin Saturdays spotlight a rotating coffee, such as a honey processed Colombian Tabi or a Vietnamese Lotus Da Lat, with a discount on a regular blend.

House blends include Fermata and Harmony. Single origins on the list when we checked: Colombia Honey Process Tabi, Vietnam Lotus Da Lat, Honduras San Vicente Parainema, Ethiopia Sidamo Natural, Sumatra Gayo and Papua New Guinea Chimbu Valley Typica. Two Poulsbo cafes are open daily: the downtown cafe on Front Street and a Finn Hill cafe with a drive-thru that opens at 5:30am on weekdays.
