He Brews Coffee Roasters is one of the beloved local roasters we follow in Washington: an independent roaster based in Kalama. Here is what their own pages and public sources say about them, in our words.
Their story
The family began in 2006 with espresso catering at weddings and festivals before moving into roasting. Early roasts were done in a popcorn air popper with green beans found on Craigslist; the equipment grew until the business went commercial. A military veteran and his family own and run the roastery, with the husband, wife, son and daughter all helping out.
Roasting happens on Tuesdays and Fridays, each bag carries its roast date, and the FAQ says flavor usually peaks four to six days later. Bringing bags of fresh roast to friends and family over the holidays helped push the family from home roasting to a commercial operation. Besides retail, it supplies coffee for events, offices, churches, fundraisers and coffee stands, and it prints clients' logos on private label bags.

House blends include The Forge, The Anchor, The Pioneer, The Unseen and Tachycardia. Single origins on the list when we checked: The Summit: Guatemala, The Summit: Brazil and The Summit: Colombia.
