El Jefe Coffee is one of the beloved local roasters we follow in Washington: an independent roaster based in Tieton. Here is what their own pages and public sources say about them, in our words.
Their story
Scott, the roaster, spent three decades in Denver aerospace work, co-founded MORU Coffee there and started a roasting co-op before moving to Central Washington. He set up the roastery in a former filling station in Tieton after driving through the town. Before coffee, Scott grew up in an Army family and worked on aircraft in the Air Force and as a rescue boatman in the Coast Guard, jobs whose long shifts made coffee a habit.
In 2021 he left Denver and worked as a river guide in Moab before settling near Yakima, and the story page says he plans to start another roasting co-op in Tieton. Green coffee comes from Brazil, Colombia, Peru, Ethiopia and Guatemala, and Scott cups every new roast before it is sold. The roastery says it uses low-emission roasting equipment.
What they roast
House blends include Espresso and Dark Roast. Single origins on the list when we checked: Ethiopia, Guatemala, Kenya, Organic Colombia and Organic Peru. An espresso is on the list. A decaf is on the list. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.
