Their story

Simon Craven Thompson says the idea started on a napkin in 1993, and he and his wife Becky built the roasting company from there. The family-owned company hand-roasts its coffee in Spokane and says it buys from family-run farms. Cravens opened on April 1, 1993, and its brand story says that made it the third coffee roaster operating in Spokane at the time.

Batches go through a restored 1940 cast-iron Probat that is run by hand, with the roasters judging each roast by sight and sound instead of automated profiles. The four house roast levels trace back to the Northern European style that co-founder Simon Thompson picked up while working at Seattle's Best Coffee. Several farm ties go back decades: organic coffee from Mexico's CEPCO co-op since about 2000, Sumatra IKA Farina since 2000, and Tanzania's Mondul Estate since 2005, where Cravens says it acts as the main buyer.

House blends include Organic Adam's Northwest Blend, Organic Breakfast Blend, Organic Earth & Sky, Organic Moon Bean, Organic Northwest Dark Roast, Organic Rocky Mountain High, Organic San Sophia Blend, Organic Sun Dance Blend, Organic Montana Jacks and Organic Caffe Bazza.
