Their story
Tom and Leslie Hutchinson came to Spokane from San Francisco in 1976 and opened a roastery and coffee house downtown, the first specialty roaster in Eastern Washington by their account. The company still hand-roasts arabica in small batches for retail and wholesale buyers. The Spokesman-Review reported in 2026 that Tom Hutchinson got the idea while unloading coffee sacks from ships part time for a friend's importing firm, and the pair chose Spokane partly for its four seasons.
The first roastery was on South Wall Street, with the St. Regis Cafe as its first wholesale account; it later moved to North Howard Street, then Grant Street, and in 2019 to a 9,300 square foot Spokane Valley building. Son-in-law Jeff Henry, who joined in 2005, is general manager, and granddaughter Meghan Martin runs the cafe. After the downtown cafe closed in 2009 the company focused on wholesale, then returned downtown in June 2026 with a cafe in the Catalyst Building.

Roast levels run Italian Roast and French Roast. House blends include Organic Breakfast Blend, Organic Clearwater Blend, Organic Cutthroat Blend, Organic Dark House Blend, Organic Spokane Falls Blend, Frank's Diner Blend and Twigs Blend. Single origins on the list when we checked: Ethiopia, Organic Peruvian, Organic Sumatran and Organic Guatemalan. Espresso: Espresso Monique; Organic Espresso Diaggio. Decaf: WP Organic Mexican Decaf. Blends such as Spokane Falls and a Mt. Spokane K-cup are named for local landmarks. Its bags fill shelves at Rosauers, Yoke's, Super One Foods and Harvest Foods, and it has roasted Huckleberry's Natural Market's private label since that chain began. Roasting runs 1,000 to 1,200 pounds a day in what the company calls a Seattle style, mostly medium to dark. Twigs, Mizuna, Frank's Diner and Wild Sage are among the Spokane restaurants pouring its coffee.
