Whole bean coffee

Roasted coffee sold unground, so you grind it when you brew.

What is whole bean coffee?

Whole bean coffee is roasted coffee sold as intact beans, not ground. You grind it yourself right before brewing, which keeps it fresh longer: ground coffee goes stale faster because far more of its surface is open to the air. It is different from green coffee, which is the raw bean before roasting.

Why whole beans last longer

Grinding opens up new surface, and every new surface meets oxygen. Wikipedia's coffee preparation article puts it this way: ground coffee deteriorates faster than roasted beans because of the greater surface area exposed to oxygen, which is why many coffee drinkers grind immediately before brewing. Its coffee roasting article adds that ground coffee is best used right away.

Roasted beans also give off carbon dioxide for days after roasting. Wikipedia notes that coffee must degas for several days before it is vacuum packed, and that foil-lined bags with pressure-relief valves are the other way to pack it fresh.

The table is the National Coffee Association's storage guide. The NCA also says to keep coffee in an opaque, airtight container somewhere dark and cool, to buy only enough for one or two weeks, and to wait to grind until you brew. For peak flavor it suggests brewing about 2 to 7 days after roasting. Wikipedia's roasting article is a little more generous, calling whole beans fresh for up to a month if kept cool.

So the roast date on the bag tells you more than a best-by date. See roast date.
