Their story

Roasting began in 2003 in a small Whidbey Island farmhouse on a one-pound machine. A few roaster fires and the need to step up to a six-pound machine pushed the young company to the Sky Valley, at a time when money was short. Today it roasts on a 55-pound Diedrich IR-24 and has set up a proper cupping table.

It says it joined the farm direct movement early and now buys from growers and cooperatives in more than ten countries. Uncle Billy's Red Eye Remover began as a request from the owner's uncle for a strong blend for his trucker friends in West Virginia, and it carries more caffeine than the other dark roasts. The house espresso, Quattro e Uno, gets a medium dark roast in the northern Italian manner and pairs Sumatran beans with Ethiopia Yirgacheffe.

Staff are promised a living wage plus a 25 cent hourly raise every 90 days, on top of merit increases.

What they roast

Roast levels run Medium, Medium-Dark and Dark (French). House blends include Uncle Billy's Red Eye Remover, Smiling Dog, Donut Shop Coffee, Sky Valley Mud and Yo Momma. Single origins on the list when we checked: Ethiopia Yirgacheffe and Sumatra Mandheling. Espresso: Quattro e Uno Espresso (medium dark, northern Italian style). Decaf: Decaf, Swiss Water Process. Where to drink it

The Kelsey Street roastery has a coffee shop that is open six or seven days a week, but the site lists two different sets of hours, so it is worth checking before a visit.
