Papaver Roaster House is one of the beloved local roasters we follow in Washington: an independent roaster based in Olympia. Here is what their own pages and public sources say about them, in our words.
Their story
A small team with Ukrainian roots runs the roastery, and guests often tell them the cafe reminds them of trips to Europe. Green coffee comes both through importers the team trusts and straight from producers, and each lot is cupped as well as lab tested. Before roasting, green lots are tested for moisture, water activity, density and defects to help set each profile.
All coffee goes through a Loring Smart Roaster, and roast color is checked with an Agtron meter. The team also measures brewing and extraction with DiFluid instruments and uses those readings to adjust its roast profiles. Most of the menu sits at light and light medium roast levels, including Gesha lots from Peru and Colombia and several washed and natural Ethiopians.

Roast levels run Light, Light medium and Medium. Single origins on the list when we checked: Peru Gesha La Naranja, El Salvador Nelson Flores, Ethiopia Yabitu Koba, Burundi Bahire, Colombia Quebraditas Kiwi, Ethiopia Dogo Sodu, Ethiopia Uraga Siko, Colombia Chiroso, Kenya Kirinyaga AA, Mexico Las Lomas, Peru Bernabe Chinguel and Colombia Gesha Waterfall. The Columbia Street cafe is open Tuesday through Sunday, from 7am on weekdays and 8am on weekends, and closed Mondays.
