Mercurys Coffee Co. is one of the beloved local roasters we follow in Washington: an independent roaster based in Bellevue, founded in 1998. Here is what their own pages and public sources say about them, in our words.

Their story

Morgan Harris opened the first shop in Woodinville in 1998, and the company has since grown to 16 stores. A combined roastery and bakery opened in Bellevue in 2018, and the original Woodinville store reopened in 2021. More than 250 employees now work across its 16 stores, and the company says its beans are grown without synthetic pesticides or fertilizers.

It says it placed first in Evening Magazine's Best of Western Washington contest every year from 2012 through 2017, and again in 2024. The wholesale side roasts 100 percent organic coffee in small batches for cafes, offices and hotels, offers private label roasting, and sends its own technicians to service equipment from Bellingham to Olympia.
