Hello Em is one of the beloved local roasters we follow in Washington: an independent roaster based in Seattle, founded in 2021. Here is what their own pages and public sources say about them, in our words.
Their story
Roasting happens weekly on site on a Stronghold S9, with an owner and head roaster developing the blends together. The shop focuses on fine robusta from Buôn Ma Thuột in Vietnam, bought direct, alongside a rotating arabica blend. Its coffee is also poured at a group of related Vietnamese restaurants in Seattle, including the Phở Bắc shops.
Yenvy Pham, a co-owner of the Pho Bac restaurants, opened Hello Em in January 2021 inside the Little Saigon Creative space. Pham had no coffee background but came from the food business; unable to find Vietnamese beans she liked, she chose to roast them herself. When it opened, Daily Coffee News reported, the shop roasted robusta on a fluid-bed machine in view of customers.
What they roast
Roast levels run medium light, medium dark and very dark. House blends include Em (arabica blend). Single origins on the list when we checked: Anh (fine robusta, phin roast) and Việt fine robusta (espresso roast). Espresso: Việt fine robusta. Why buying from Hello Em matters here
The cafe shares its space with Little Saigon Creative, a project of the nonprofit Friends of Little Saigon, as part of an effort to keep the neighborhood's Vietnamese character alive. The Vietnamese word em is a tender form of address for someone close, and the shop says that is who it brews for. The drink list runs from ca phe sua da to egg coffee, coconut and pandan drinks, alongside pressed banh mi.
Every bag bought from a Seattle roaster pays roasting and cafe wages in Washington, and the coffee reaches you days after roasting instead of months. That is the reason the club exists. Why local roasters matter.
