Giddy Sloth is one of the beloved local roasters we follow in Washington: an independent roaster based in Seattle. Here is what their own pages and public sources say about them, in our words.
Their story
The roaster works only with Costa Rican arabica and wants each cup to carry a taste of Costa Rican culture. One sourcing area is Monteverde, where farms grow Catigua, a rust-resistant cross of Catuai and Timor Hybrid. Founder Carlos Chaves was born in Costa Rica, spent much of his childhood in San Jose's Plaza Viquez neighborhood and moved to the United States at 14.
He writes that he has drunk coffee since age four and that a recent trip home gave him the idea of bringing the Costa Rican coffee table to Seattle. By late 2024 the business had grown its roasting, carried out a farm evaluation and, in May 2024, opened Giddy Sloth Cafe.

Roast levels run Light and Medium-light. Single origins on the list when we checked: Honey Process (medium-light) and Full Wash (light). Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.
