Their story
Bill Levin began Biowilly's as a nano-roaster and grew it to supply local businesses as well as family and friends. Sustainability shapes the operation, and the roastery runs partly on solar power. Through Paraisocafe it sells coffee grown by the Kogi people in Colombia's Sierra Nevada mountains.
Bill Levin does the roasting himself in small batches, aiming to bring out the aroma and flavor of each origin. The menu rotates with the seasons, each order is roasted to order, and fresh roasts ship out once a week.
