The Good Coffee Company is one of the beloved local roasters we follow in Washington: an independent roaster based in Seattle, founded in 1972. Here is what their own pages and public sources say about them, in our words.
Their story
Roasting began downtown in 1972, and the business has been on its Post Ave block since 1985. Every batch still goes through a 1961 cast iron Probat run by hand, with no automated controls. Carl, the head roaster, has run that same machine for more than thirty years.
Joe Kittay founded the company in 1972 and for decades sold bags of beans without serving drinks; his son Carl later worked alongside him. UW Magazine reports that Starbucks co-founder Jerry Baldwin said the Probat had come from Alfred Peet and was the machine Baldwin learned to roast on. After Joe Kittay died in 2022 at 96, longtime customer and UW tax instructor Stephen McDonald bought the business, taking the keys in November 2025.
McDonald added a small cafe that opened on August 1, 2026, and his parents moved from Missouri to help run the shop.

House blends include Colman Blend, Maritime Blend, Campfire Blend, Old Hippie Blend, Good Cause Blend and House Gray. Single origins on the list when we checked: Kenyan, Ethiopian and Colombian. Espresso: Gray Day Espresso. Decaf: Swiss Water Decaf. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.

The Colman Blend shares its name with Colman Dock, the ferry terminal a short walk from the roastery. Over the years its wholesale customers included the Last Exit in the University District and Cafe Allegro.
