Seven Coffee Roasters is one of the beloved local roasters we follow in Washington: an independent roaster based in Seattle, founded in 2006. Here is what their own pages and public sources say about them, in our words.
Their story
Seven's tagline is born in Hawaii, made in Seattle. The founder named the company for a grandmother the grandkids called Nana, which they note means seven in Japanese, and credits her with the values of hard work, kindness, generosity and community. The founder started roasting and opened a first cafe in Seattle's Greenwood neighborhood in 2006. That space is now home to Makeda and Mingus. Seven also roasted for other Seattle businesses and became known as the small roaster for small businesses.
In 2012 it opened a market and cafe in a century old landmark building in the Ravenna neighborhood, selling its own coffee alongside pastries from local bakeries and Northwest beer and wine. It keeps things simple, with plain packaging and no lavish cafes, and says it is independent, not part of a larger company. Since the pandemic it has focused more on its online shop and subscriptions to reach customers around the country. It belongs to the Specialty Coffee Association and the Kona Coffee Council.

Roast levels run light, medium and dark. House blends include Honolulu Hawaiian Blend, Pano Hawaiian Blend, Na Pali Hawaiian Blend, Hapuna Hawaiian Espresso Blend, Espresso Huli Blend, Diner Blend, Biscuit Bitch Blend and Seasonal blends (Fall, Winter French Roast, Spring, Summer). Single origins on the list when we checked: 100% Kona Hawaiian Coffee, Brazil Carmo de Minas (direct trade), Brazil Mantiqueira de Minas micro lot, Ethiopia Yirgacheffe, Ethiopia Kaffa Forest, Guatemala Trapichitos, Organic Mexico Santa Fe and Sumatra Mandheling Old School. Hapuna Hawaiian Espresso Blend, Espresso Huli Blend and a roaster's choice espresso blend. Nana's Decaf Blend and a Swiss Water Decaf Brazil Cerrado. The Ravenna market and cafe is open daily, 7 am to 7 pm, and runs as a zero waste cafe.
