Ristretto

The same coffee as an espresso, half the water, a smaller and more intense shot.

What is a ristretto?

A ristretto is a short shot of espresso: the same dose of ground coffee as a normal shot, brewed with about half as much water. The name means shortened or narrow in Italian. The result is smaller, around 20 ml from a double basket, and more concentrated, with a different balance of flavors than a full-length shot.

How a ristretto is pulled

A barista doses a double basket as usual, around 14 to 18 grams of ground coffee, and stops the shot at roughly half the normal volume. According to Wikipedia's ristretto article, the shot still runs about 20 to 30 seconds. To get less liquid in the same time, the grind goes finer, which slows the water down. Wikipedia's espresso article makes the same point: a ristretto is not just a normal shot cut short, which would give an under-extracted drink, but a shot with the grind adjusted to hit its smaller volume.

A "double ristretto" uses the beans of a double shot and fills only a single shot glass.

How it tastes, and why

Wikipedia's ristretto article gives three reasons a ristretto tastes different from a full shot:

  • It is more concentrated, because the first part of any shot is the densest.
  • It has a different balance. Coffee compounds dissolve at different speeds, and a ristretto holds more of the fast ones and fewer of the slow compounds linked to over-extraction.
  • It holds fewer compounds in total, caffeine among them.

The same article describes a straight ristretto as bolder and fuller, with more body and less bitterness. In a latte or an americano, a ristretto base tastes less bitter with a more intense espresso character. It is among the strongest traditional coffee drinks: Wikipedia's coffee extraction article says a ristretto can hold up to 0.75 g of dissolved solids in a 15 g serving, over four times as strong as a typical cup of coffee.

Washington coffees sold for the straight shot
